Rub Me Right

So you’ve hung up the waders and put on your apron... now what should you do with that hard-won fish? Try this flavorful preparation and have your catch ready for the table in 20 minutes. We use it for salmon here, but it’ll work just as well spicing up your fresh-caught trout.

Ingredients:
2 lbs. Montana Coho Salmon fillet cut into four 8-ounce portions
1/2 cup tamari or soy sauce
3 Tbsp. ground cumin
3 Tbsp. cinnamon
3 Tbsp. ground ginger
1 Tbsp. ground coriander
1/2 Tbsp. smoked paprika
2 tsp. sugar
2 tsp. black pepper
2 tsp. salt

Pre-heat oven to 400 degrees. Marinate the fillets with the tamari for ten minutes. Combine all the seasonings well, and rub each fillet with the mixture. Place in a baking dish and bake uncovered for five to ten minutes or to preferred doneness. Serve with Basmati rice and steamed vegetables for a fast, flavorful dinner. Serves 4.
